Spaghetti with Shrimp in Creamy Cream Cheese Sauce

This delightful recipe combines al dente spaghetti with succulent shrimp in a velvety cream cheese sauce, perfect for a cozy evening.

Ingredients

  • 400 g Spaghetti
  • 300 g Shrimp (peeled and deveined)
  • 200 g Cream Cheese (plain or with herbs)
  • 150 ml Vegetable broth
  • 100 ml Cream (optional for extra creaminess)
  • 2 cloves Garlic (finely chopped)
  • 1 small Onion (finely diced)
  • 2 tbsp Olive oil
  • ½ Lemon Juice
  • Salt (to taste)
  • Pepper (to taste)
  • Chili flakes (optional for some heat)
  • Fresh Dill, Parsley or Basil (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 100 ml of the pasta water before draining the spaghetti.
  2. In a large pan, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the chopped garlic and sauté for another 30-60 seconds until fragrant.
  3. Add the shrimp to the pan and cook for about 1-1.5 minutes on each side until they turn pink and curl slightly. Drizzle with lemon juice and remove from the pan.
  4. In the same pan, add the cream cheese, vegetable broth, and optional cream. Stir until smooth and let it simmer until slightly thickened. Season with salt, pepper, and chili flakes if desired.
  5. Add the drained spaghetti and shrimp back into the pan with the sauce. Mix well to coat everything evenly. If the sauce is too thick, add reserved pasta water as needed.
  6. Heat everything gently for about a minute until warm. Plate the spaghetti with shrimp and garnish with fresh herbs. Enjoy directly from the pan!
