400 g Spaghetti
300 g Shrimp (peeled and deveined)
200 g Cream Cheese (plain or with herbs)
150 ml Vegetable broth
100 ml Cream (optional for extra creaminess)
2 cloves Garlic (finely chopped)
1 small Onion (finely diced)
2 tbsp Olive oil
½ Lemon Juice
Salt (to taste)
Pepper (to taste)
Chili flakes (optional for some heat)
Fresh Dill, Parsley or Basil (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 100 ml of the pasta water before draining the spaghetti.
Add the shrimp to the pan and cook for about 1-1.5 minutes on each side until they turn pink and curl slightly. Drizzle with lemon juice and remove from the pan.
In the same pan, add the cream cheese, vegetable broth, and optional cream. Stir until smooth and let it simmer until slightly thickened. Season with salt, pepper, and chili flakes if desired.
Add the drained spaghetti and shrimp back into the pan with the sauce. Mix well to coat everything evenly. If the sauce is too thick, add reserved pasta water as needed.
Heat everything gently for about a minute until warm. Plate the spaghetti with shrimp and garnish with fresh herbs. Enjoy directly from the pan!
